Healthy CrockPot Chicken Tacos

This recipe calls for three ingredients to make moist, savory, healthy chicken that makes amazing tacos. The chicken cooks all day and all you need is 5 minutes to chop veggies and assemble. How easy is that? Oh, and they are easy on the pocket book and did I mention healthy?

Ingredients
  1. • Chicken breasts 4-5
  2. • Taco season packet (I like to use the low sodium)
  3. • 1 jar of salsa (16 oz)
Instructions
  1. Dump the above ingredients in the crock pot. Cook on low for 6-8 hours or high 3-5. Once finished, use a fork and shred the chicken. Let sit while you prepare the shells and toppings. I like to let it sit so the chicken really soaks up the sauce.
  2. All is optional and to your personal preference. I like to keep it healthy, so I use corn or flour small tortillas, a healthy scoop or two of chicken, little to no cheese, lettuce, tomato, avocado, and cilantro. Sky is the limit. The chicken is great for any Mexican dish.
Notes
  1. I cut this recipe in half and use my small crockpot. It is enough to feed my husband and I dinner, and we have enough left-overs for lunch.
