Crescent Rolls Stuffed with Chicken, Spinach, and Goat Cheese

This is a quick dinner when I don’t want to spend a lot of time preparing dinner. I take a few ingredients and spend less than 5 minutes preparing everything before baking, and I have a warm, melty, delicious dinner in less than 20 minutes start to finish.

  1. • Crescent rolls (low fat and generic is fine)
  2. • Spinach
  3. • ½ bag of Pre Cooked and sliced chicken
  4. • Goat cheese (I use half of the small package)
  5. • Parmesan cheese
  6. • Spray butter
  1. Preheat oven to 375 degrees. Wilt spinach in a large pan. Only cook a minute or two. I use about half of a bag here.
  2. Place unrolled crescent rolls on a parchment paper lined pan. On the fat part of the roll, top of the triangle, place chicken, spinach, and a hunk of goat cheese. Roll up. You don’t have to worry about sealing the edges because the goat cheese won’t bubble out.
  3. Place in the oven and bake according to the roll directions. Don’t put the oven on higher than 375, and bake a little longer because the filling makes it difficult for the inside of the roll to get done. If the oven is too hot, the outside will burn and the inside will be too raw.
  4. Once done, remove and spray with butter and sprinkle with parmesan.
