DIY Gourmet Chicken Salad

I love this salad and usually pay around $10 for it. I decided to make it myself, and save a little money. I used the left over from my rotisserie chicken I made in the crock pot the night before. The only time it takes to prepare is assembly.

Gourmet Chicken Salad
  1. • Chicken breast I used left over from my rotisserie chicken (or packaged, sliced, and already cooked breasts).
  2. • Spinach and spring mix of lettuce (any greens you like)
  3. • Dried cherries
  4. • Walnuts
  5. • Poppy seed dressing (I like Newman’s)
  1. In a large bowl mix all the ingredients. I put just enough dressing to lightly coat spinach. I spent approximately $15, and got four servings. The next time I place the salad in individual containers and stored them in the fridge for a fast lunch. I have bowls that you pour the dressing in a separate container on top of the bowl. You push the button when you are ready, and it dumps the dressing into the salad. You shake and eat. (See below) Great for when my husband is trying to eat healthy at work. I saved $25 by living thrifty and doing it myself.
