Mediterranean Chicken Pizza

I rarely order pizza. It is easy to make it at home, and I can load it up with gourmet toppings for less than a fancy pizzeria. 

Mediterranean Chicken Pizza
  1. • Pizza crust (I use the all ready to go crust such as Boboli or any thin crust I can find)
  2. • Mozzarella cheese shredded
  3. • Feta cheese
  4. • Spinach
  5. • Black olives
  6. • Tomatoes
  7. • Jar of tomato or pizza sauce (usually a brand I like that I have found on sale)
  8. • Chicken breast (use the cooked, sliced, packaged breasts for ease)
  1. Preheat the oven according to the pizza crust directions. I place the crust for a few minutes in the oven. I find this helps the crust from becoming soggy. Don’t bake entirely.
  2. In a pan, place the chicken breast, olives, tomatoes, and spinach. Cook long enough for the spinach to start to wilt. Don’t overdo the spinach.
  3. Take the crust out of the oven and spread the sauce over the crust evenly. Sprinkle mozzarella cheese then place all the cooked veggies and chicken on the pizza. Sprinkle again with mozzarella cheese and then crumble the feta cheese on top. I like feta, so I get a little crazy with it. Pile as much veggies and chicken as you want onto the pizza.
  4. Bake according to the directions of the crust, but depending on how much you crisped up your crust, it might require less time. Just keep an eye on the bottom of the crust. Also, for crisp crust use a pizza stone. They really make a difference. Worth the investment because you can save money by making your pizzas at home.
