Bacon Spinach Side Salad

I am trying to get my husband to eat more veggies. Salad plus bacon equals husband eating his veggies. The dressing helps as well. I have found that this poppy seed dressing goes with most salads. It’s creamy, and a little goes a long way. This is a great way to change up a boring side of steamed vegetables

Ingredients
  1. • Spinach
  2. • Hard boiled eggs
  3. • Bacon
  4. • Tomato
  5. • Newman’s Poppy Seed Dressing
Instructions
  1. Hard boil the eggs. I put the eggs in a pan and fill with water. Bring water to a boil. Place a lid on the pan and remove from heat. I let the eggs sit for an hour or two. Eggs are always perfect. Place in fridge and you have a quick and easy source of protein.
  2. Cook bacon. For better bacon, Cook on a lower temperature for longer. It produces juicer bacon in my opinion. I usually put in at 350 or 375 degrees. Once done, cool and then chop. Dice tomato and chop up an egg. Mix everything in a bowl and pour in just enough dressing to lightly coat spinach leaves.
