Easy One Pot Healthy Chili

With fall upon us, I like warm comfort food minus all the extra fat and calories that accompany it. This Chili is simple, takes less than 30 minutes start to finish, and is a great healthy alternative to your favorite comfort food dish.  In addition, it is just as good reheated and makes excellent work lunches.

Ingredients
  1. • 1 lb Lean ground beef or ground turkey (I use the 4% fat beef. You can also use more if you like it extra meaty)
  2. • 1 Can of Rotel
  3. • 1 can of diced tomatoes
  4. • 1 chili seasoning packet (I used low sodium McCormick)
  5. • 1 can of white beans (whatever you like is fine)
  6. • 1 can of water (I use Rotel can that I just emptied)
Instructions
  1. Brown ground meat and drain. Season with what you like.
  2. Add the remaining ingredients and simmer 20 minutes.
  3. You can top with shredded cheddar or jack, avocado, sour cream, tortilla chips, etc.
