Healthy, Easy Asian Salmon and Vegetables

This super simple dish is packed with flavor, and it will get your picky eaters eating their veggies. My husband is not a fan of fish or anything remotely healthy, but with this dish, he cleans his plate. A quick marinade does all of the work. It is easy to make, with very little prep time, and little to no clean up.

Ingredients
  1. • Salmon Filet (any size, just adjust cooking time for thickness of filet)
  2. • Steam bag of green beans
  3. • Red, yellow, orange pepper (optional. I usually use the equivalent of a whole pepper to 1½)
  4. • 1/3 C brown sugar
  5. • 1/3 C soy (low sodium is better)
  6. • 1/3 C vegetable oil
  7. • 1/3 C water
Instructions
  1. Wisk the last four ingredients in a bowl. Place your salmon filet in a zip lock bag and pour marinade over salmon. Place in fridge and let set for at least an hour.
  2. Steam green beans according to package. Slice peppers into thin strips.
  3. Line a deep pan with foil and place green beans and peppers in the bottom. Place the salmon filet on top and pour all of the marinade over the salmon and vegetables.
  4. Bake at 400 degrees for approximately 18 minute. Cooking time varies on the size of your salmon.
Notes
  1. You can also use Julian carrots or other veggies in with the green beans. You can make more marinade making a larger batch. Just be sure to have equal parts for the four ingredients.
