Healthy Frittata

This is a favorite for dinner in my house.  It is light and healthy, easy to prepare, and you can easily substitute any lunch meat or cheese that you have in the refrigerator. It is my go dinner to when I have had a carb heavy lunch, or I need a healthy dinner option.

Ingredients
  1. • 4-5 eggs
  2. • 1 c of milk (skim, 2%, whole all work)
  3. • Deli ham (I use about half the package)
  4. • Swiss cheese and shredded mozzarella (Or any cheese you have on hand. Use as much or as little as you like. I use low fat cheeses.)
  5. • Spinach
  6. • Mushrooms
  7. • Salt and pepper
Instructions
  1. Sauté mushrooms in a pan. Next, add spinach and cook for 1 minute, or until spinach has wilted.
  2. Spray pie pan generously with cooking spray. Layer in mushrooms, spinach, ham, and cheeses.
  3. Wisk eggs, milk, salt, and pepper. Pour egg mixture over your layers in the pie pan.
  4. Bake at 375 degrees for approximately 45-50 minutes.
