Healthy Quiche

I love quiche for breakfast, lunch, and especially dinner. I don’t love how pricey it can be at the restaurants or how fatty it is. This fantastic recipe is light, healthy, and can be altered easily to tailor to what you have in the fridge. 

Healthy Quiche Recipe
  1. • Pie Shell (in the refrigerated section)
  2. • 4 eggs
  3. • 1 cup of milk
  4. • Salt, pepper, garlic (all optional and to your liking)
  5. • Extra lean ground beef (or ground turkey, ham, chicken)
  6. • Low fat Swiss and mozzarella cheese (any type you want will work)
  7. • Spinach
  8. • Mushrooms (any veggies will work)
  1. Heat oven to 375. Place pie shell in pie plate and set aside.
  2. In a large pan, cook meat and drain. In same pan sauté garlic and mushrooms. Once brown, add spinach, meat, and seasonings. Cook one minute, just enough for the spinach to wilt.
  3. Layer meat/veggie mixture with cheese in your pie shell until filled to the top.
  4. In a bowl, mix your four eggs and 1 cup of milk. Pour over ingredients in shell.
  5. Place in oven and cook approximately 1 hour. You want to make sure the top has browned slightly. You might have to cover crust edged with foil towards the end so it does not burn. Usually I don’t need to.
