Healthy Strawberry Cupcakes

These are light, sweet, fluffy, low in calories, and taste heavenly. There are no eggs and there isn’t any oil. No need. By substituting those 2 ingredients with one can of diet soda, you eliminate hundreds of calories. Easy, light, and healthy. 

Healthy Strawberry Cupcakes Recipe
  1. • Strawberry cake mix
  2. • 1 can of diet sprite or 7 up
  3. • Fresh strawberries and a little splenda (optional)
  1. • Instant Vanilla pudding mix (any flavor you like will work)
  2. • 1 Cup of Milk (I use skim)
  3. • 1 tub of Cool Whip (Any kind will work, I used fat free)
  4. • Vanilla (optional)
  1. Mix diet soda with cake mix. Pour into muffin tin. That’s it. I like to dice fresh strawberries and mix with a spoonful of splenda. I then mix those berries into the batter. Cook according to the cake mix directions.
  2. Mix the pudding packet with 1 cup of milk (you use half of the milk required). Whisk until thick. Fold in cool whip. I add food coloring to make it a pretty color. I also used vanilla extract to add to the vanilla flavor. Set in the fridge for at least an hour so it can set up.
