Orzo Pasta and Veggies

I am always searching for alternatives to potatoes and rice. Orzo pasta is light, soaks up other flavors well, and is a great accompaniment to most meat dishes. It is an inexpensive dish that takes little time to prepare. You can toss with so many different vegetables, and I usually just use whatever is in the fridge. Add your favorite spices and herbs for a nice change to the traditional starches. 

Orzo Pasta and Veggies Recipe

Ingredients
  1. • Orzo Pasta (small box in the dry pasta section)
  2. • Spinach
  3. • Tomato
  4. • Garlic
  5. • Extra Virgin olive oil
  6. • Basil, oregano, salt, pepper, parsley
Instructions
  1. Boil pasta according to directions. I usually do a minute under the recommended time, so it can soak up the sautéed veggies and juices. Drain, do not rinse.
  2. In a pan add oil and sauté garlic and tomatoes. Add pasta and your herbs. Mix well and cook a couple of more minutes. Add spinach and toss, just wilting the spinach.
