Cheesy Scalloped Potatoes

Creamy, cheesy, warm, filling, comfort food that is fairly simple to make. A little prep time and in about an hour you have a warm, gooey, and hearty potato side dish that is sure to please.

Cheesy Scalloped Potatoes
  1. • Potatoes sliced (I used 1 bag of new potatoes and leave the skin on)
  2. • Salt, pepper and cayenne pepper
  3. • 4 T Butter
  4. • 2 T flour
  5. • 2 cups of milk
  6. • 1 C cheddar cheese (any shredded cheese is fine)
  7. • 3 oz. of Cream cheese
  1. Preheat oven to 350. Slice potatoes. Layer them in a casserole dish. I salt and pepper generously the slices. In a sauce pan melt butter and wisk in flour. Let cook for a minute and then add milk. Once bubbly, add cheese. Pour the mixture over the potatoes.
  2. Cover with foil and cook in the oven for 1 hour and 15 minutes. Might need longer depending on how thick your slices of potatoes are. I uncover and let cook another 10 minutes so the top can get brown. Top with more cheese if desired.
  1. I used 2 lb of potatoes, but there is enough sauce mixture to cover up to 4 lbs of potatoes.
