Spaghetti Genovese

Here is a quick dish that has lots of flavor. It is a great accompaniment to most meat dishes or you can throw in sliced chicken breast for a meal in itself. 

Spaghetti Genovese Recipe
  1. • Spaghetti or angel hair pasta
  2. • Butter or extra virgin olive oil (whatever is your preference)
  3. • Walnuts
  4. • Oregano
  5. • Basil
  6. • Parsley
  7. • Parmesan Cheese
  8. • Garlic Pepper
  9. • Salt (dash or two)
  1. Cook pasta according to directions on the package. Drain, but do not rinse noodles. Put the pasta back into the pan and toss with either the oil or butter.
  2. Sprinkle in oregano, basil, pepper, salt, cheese, and walnuts. Stir until thoroughly coated. I usually only make ½ of the package of pasta if I am preparing this as a side dish. There are no exact measurements here. I keep adding the seasoning until it looks like it is evenly distributed over the pasta and by taste of course.
  3. I go heavy with the cheese because that is how we like it. There is no wrong amount. Go slow at first and keep adding until you are happy. Do make sure to use enough oil or butter so the pasta is not too dry but not too much so it is swimming in it.
